Meet Our Founder

After 26 years in hospitality, Carol Sizer Holladay recently fulfilled her lifelong dream of owning and running her own restaurant when she opened The Pinery on Lake Ivanhoe in Orlando, Florida. Creating unforgettable guest experiences, delivering menus that are adventurous while still being approachable, and building a respected and rewarded team, encompass the fundamental tenants of her approach to the industry. With wide-ranging restaurant experience across the south-from Boone, NC to Charleston, SC to New Orleans, LA-she is thrilled to be back in her native city of Orlando as she embarks on her new venture.

Christian Greiner – Executive Chef

With nearly two decades of experience in the culinary industry, Executive Chef Christian Greiner brings a dynamic blend of creativity, leadership, and operational expertise to The Pinery. His career has spanned diverse roles—from food truck operations to high-volume kitchens—shaping him into a versatile chef known for delivering both memorable flavors and streamlined efficiency.

Over the years, Christian has had the honor of preparing meals for renowned guests including Barack Obama, Reba McEntire, Robert Plant, and Kevin Costner—an experience that refined his focus on delivering exceptional, elevated dining experiences.

As Executive Chef of The Pinery, Christian combines his passion for culinary excellence with a commitment to fresh, locally inspired cuisine that reflects both Central Florida’s vibrant flavors and the restaurant’s elevated yet approachable spirit.
